Double Vanilla Chocolate Chunk Cookies

These cookies are…awesome.


If you don’t have a vanilla bean to use that’s OK…BUT….on Amazon you can get them super cheap!

Chewy Double Vanilla Chocolate Chunk Cookies
12 Tablespoons unsalted butter half melted
1/2 cup Sugar
1/2 Cup packed brown sugar
2 eggs
1Tablespoon Vanilla
Vanilla caviar from 1/2 or 1 whole bean
1/2 Teaspoon Salt
1/2 Teaspoon Baking Soda
2 cups plus 2 Tablespoons Flour
3-4 oz. Semi-sweet Chocolate, chopped
(if you don’t have children who would protest 1/2 cup chopped pecans…ADD THEM)

Start by melting your butter…but only half of it. I know its weird.


Beat butter and sugars together until light and fluffy. This takes a few minutes.


Add two eggs, vanilla extract and caviar.



Stop mixer. Add baking soda, salt and 1 cup flour. Mix ’til just combined. Add rest of the flour and only mix just enough to have barely any flour visible.

Add chocolate. (and nuts if you are allowed) Again, mix only until distributed.

(you can substitute chocolate chips but I think chunks are better)

Chill the dough at LEAST an hour.


Looked over while baking and saw this little cookie dough thief. At least he is cute.


Bake at 350 until center is just set. I am not going to tell you a time because there are too many factors…how long you chilled the dough and your particular ovens temperature. Just watch them. They shouldn’t take longer than 8-10 min.

Side tip-


When you are done with the vanilla bean pod, throw them in your coffee sugar. Cant beat thrifty vanilla coffee!
